Mexican Cauliflower Rice

Mexican Cauliflower Rice

Recipe courtesy of SkinnyTaste; I have altered the recipe a little.

Ingredients:
4 cups cauliflower rice
1 Tablespoon olive oil or butter
1/2 medium onion, finely diced
2 medium plum tomatoes, small dice
1/2 jalapeno, seeds removed, minced
2 garlic cloves, minced
2 tablespoons tomato paste
½ teaspoon cumin
¼ smoked paprika
¼ teaspoon cayenne pepper
1 teaspoon kosher salt
Freshly ground black pepper, to taste

Heat the butter or oil in a skillet. Saute onions, plum tomatoes, and jalapeno until tender. Add the garlic and cauliflower rice, saute until rice is soft. Add the tomato paste, cumin, paprika, cayenne, salt, and pepper. Stir well and serve. Cilantro garnish is optional.
